Easy Apple Crumble
Naturally sweetened with medjool dates and maple syrup, this cozy dessert combines cinnamon-stewed apples, pears, and sultanas under a golden oat and almond crumble.
Serves 8 | Prep time: 20 mins | Cooking time: 25 mins
INGREDIENTS
- 6 medjool dates (pitted & chopped) + 1/3 cup boiled water
- 6 medium apples, peeled & diced
- 2 medium pears, peeled & diced
- 1/2 cup sultanas ( or golden raisins)
- 1 Tbsp lemon juice
- 1 Tbsp maple syrup
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- pinch of salt
Oat Crumble
- 1 cup rolled oats (can use GF rolled oats)
- 1 cup almond flour
- 1 tsp ground cinnamon
- 1 Tbsp coconut oil
- 2 Tbsp maple syrup
METHOD
- In a small bowl, pour 1/3 cup of boiled water over the medjool dates. Set aside, then peel and dice the apples and pears.
- Place the apples and pears, medjool dates and their water, sultanas, lemon juice, maple syrup, cinnamon, vanilla extract, and pinch of salt in a medium saucepan over low to medium heat. Stew the apples and pears for around 15 to 20 minutes.
- Preheat oven to 190C / 375F and prep your baking dish with some oil on the sides if it’s not non-stick. We used a 6cm deep baking dish (approx. 17cm x 17cm square).
- While the apples and pears are stewing, combine the rolled oats, almond flour, cinnamon, coconut oil, and maple syrup in a bowl. Mix with your hands until you have a crumbly mixture.
- Once the apples and pears have finished stewing add them to your baking dish. Then spread the oat crumble mixture evenly over the top.
- Bake in the oven for 25 minutes, until the crumble takes on a golden colour.
- Cool for 10 to 15 minutes then serve as is or with vegan ice cream.
