Duncan’s one pot adventure Kitchari

"This is a simple, no fuss, nutritious dish for the people out adventuring, camping or simply getting out amongst nature. All you need is one pot to boil your ingredients over a fire. This is the perfect energy food. With all the essential minerals/vitamins, protein and iron to keep me fueled on my challenges! This is an Ayurvedic recipe and known for being not only super nutritious but also really gentle on the stomach. This is the simple version that I would pre-prep if I was out adventuring in the wild so would generally omit the fresh stuff. If you are at home and have access to fresh veg and herbs I would suggest adding some fresh flavour powerhouses like fresh ginger, coriander, chilli etc." ~ Duncan Roberts, Aussie fundraising adventurer

Serves 4 | Prep time: 15 mins | Cooking time: 45 mins

INGREDIENTS

  • 1 cup of dried lentils or yellow split peas
  • ½ cup of basmati white rice
  • 3 Tbsp Coconut Oil
  • 2 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Ground Ginger
  • 1 tsp Fennel Seeds
  • 1 tsp Ground Turmeric
  • 1 Brown Onion
  • 1 large clove Garlic
  • 1 hot chilli (optional)
  • 2 tsp of Mustard Seeds
  • 5 cups of water/vegetable stock
  • 1 tsp Sea Salt
  • 1 Tbsp Cracked Pepper

METHOD

  1. Before I head off on adventure I pre-make this simple version of the recipe so that it is no fuss when I’m out bush with limited cooking utensils at my disposal. First things first, you’ll need a clean storage container or jar to store all the dry ingredients in. Now simply add all the ingredients in to the jar and secure it, ensuring it is airtight and free from moisture.
  2. Okay, so now you are out immersed in nature and you have a fireplace roaring or a stove top cooker. Place a pot over your fire and pour in your coconut oil.
  3. Dice up your brown onion, garlic and chilli and throw them into the pot. Sauté for a minute and then throw in the entire jar of ingredients.
  4. Cook for a minute or two mixing and ensuring the ingredients don’t burn to your pan.
  5. Once aromatic, pour in your water/stock and give it a good mix.
  6. Bring to a boil and then cover with a lid and put it over low heat.
  7. Depending on your fire source, cook for 30-45mins until the moisture is reduced and the rice looks fluffy and cooked.
  8. Bring off the fire, let it stand for 10mins and then serve up.
  9. If you have access to fresh herbs, coriander is a great addition on top. Salt and pepper to taste.
  10. Enjoy!

Note: This is the stripped back version (for camping) and can sometimes taste a little simple to some people’s palates. If you are at home or have access to more supplies please feel free to get creative and add a mix of vegetables and herbs to enhance it.
