Creamy Avocado Pasta ★★★★★1 review
This is the perfect accidental dish. I had a spare avocado and some plain pasta, thus, this was born! To change this up a bit if your body doesn't respond well to pasta, you can swap the pasta for zucchini noodles instead for a raw dinner.
Serves 2 | Prep time: 10 mins | Cooking time: 15 mins
INGREDIENTS
- 1 avocado
- 1 handful of sliced cherry tomatoes
- 1/4 cup (or more) of water
- 1 small handful of fresh basil
- 1/4 cup (or more!) of nutritional yeast
- 1 handful of spinach
- 1 handful of chopped mushrooms
- pasta of choice
METHOD
- Cook the pasta as per package instructions, then transfer to a non-stick fry pan with the spinach, mushrooms and tomatoes, and let it heat and crisp up a tad.
- In the meantime, blend your avocado, water, nutritional yeast and basil in a food processor or blender until smooth and runny. Transfer the sauce to your bowl and mix it through the pasta and veg thoroughly.
- You can also have this as a cold dish in the summer time, just let your pasta and vegetables cool down, then mix through the cold avocado sauce.
Note: Add your favourite seasonings to your taste.
