Choc Maca Fudge Bites
These chocolatey, soft, chewy energy bites are the perfect, healthy grab 'n go snack that will also satisfy your sweet tooth without any sugar.

INGREDIENTS
- 17 medjool dates
- 1 cup raw cashews
- 1/2 cup raw walnuts
- 1/4 cup + 1 Tbsp cocoa powder
- 1 Tbsp maca powder
- 1 tsp vanilla extract
- 1 Tbsp tahini
- pinch salt
- coating of your choice (e.g. desiccated coconut, cocoa powder, etc)
METHOD
- Place the cashews and walnuts in a bowl. Boil some water then add the boiled water to the cashews and walnuts, just covering them. Let sit for about 5 minutes, then drain the water.
- Add all the ingredients to the food processor and blend until fudgy consistency is reached. Occasionally stop and scrape down the sides of the food processor.
- Prepare a small bowl with the coating of your choice.
- Form round balls with the fudge mixture, then roll in the coating.
- Best served after refrigerated for one hour. Enjoy!
