Choc Maca Fudge Bites ★★★★★1 review

These chocolatey, soft, chewy energy bites are the perfect, healthy grab 'n go snack that will also satisfy your sweet tooth without any sugar.

Serves 22 | Prep time: 15 mins | Cooking time: 0 mins

INGREDIENTS

  • 17 medjool dates
  • 1 cup raw cashews
  • 1/2 cup raw walnuts
  • 1/4 cup + 1 Tbsp cocoa powder
  • 1 Tbsp maca powder
  • 1 tsp vanilla extract
  • 1 Tbsp tahini
  • pinch salt
  • coating of your choice (e.g. desiccated coconut, cocoa powder, etc)

METHOD

  1. Place the cashews and walnuts in a bowl. Boil some water then add the boiled water to the cashews and walnuts, just covering them. Let sit for about 5 minutes, then drain the water.
  2. Add all the ingredients to the food processor and blend until fudgy consistency is reached. Occasionally stop and scrape down the sides of the food processor.
  3. Prepare a small bowl with the coating of your choice.
  4. Form round balls with the fudge mixture, then roll in the coating.
  5. Best served after refrigerated for one hour. Enjoy!
