Serves 1 | Prep time: 30 min | Cooking time: 20 min
INGREDIENTS
- 300g Carisma* potatoes (or other potatoes), diced into 1cm pieces
- 150g firm tofu, roughly crumbled
- 300g passata
- 100g broccoli, diced
- ½ red capsicum, diced
- 1-2 large leaves Tuscan kale, chopped
- 1 large handful baby spinach, chopped
- 100ml light soy milk (eg. Vitasoy Soy Milky Lite)
- 10g nutritional yeast flakes, plus a little extra for sprinkling
- ½ tsp cornflour
- 1 clove garlic, crushed, or ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp dried oregano or mixed Italian herbs
- Pinch of chilli flakes, optional
- Olive oil spray
- Salt and black pepper, to taste
METHOD
- Parboil the potatoes: While dicing the potatoes, boil a full kettle of water. Add the diced potatoes to a saucepan with the boiling water and cook for 10 minutes. Drain well.
- Crisp the potatoes: Place the potatoes in an air fryer liner. Season with salt, pepper and smoked paprika then lightly spray the potatoes with olive oil. Air fry at 190°C for 10 min, or until golden and crisp around the edges.
- Prepare the filling: While the potatoes are cooking, lightly spray a non-stick frying pan with olive oil. Add the crumbled tofu, broccoli, capsicum and kale and cook for 4-5 min.
- Add the passata, garlic, oregano, chilli flakes (if using), salt and pepper. Simmer for 4 min, keeping the mixture nice and saucy. Stir through the spinach.
- Make the cheesy sauce: In a bowl, whisk the soy milk, nutritional yeast and cornflour together until smooth. Season with a little garlic powder, salt and black pepper.
- Assemble the bake: Lightly oil spray a small air-fryer-safe baking dish, then spoon in the tomato and tofu mixture. Scatter the crispy potatoes over the top, gently pushing some down into the sauce while leaving plenty exposed and crispy.
- Pour the cheesy sauce evenly over the potatoes and sprinkle with a little extra nutritional yeast.
- Bake: Air fry at 180°C for 10 min, until bubbling around the edges and golden on top. Serve hot.
