Avocado Salsa Tartlets
These Avocado Salsa Tartlets are the ultimate hosting hack. They're a party finger food that looks gourmet but requires almost zero effort. By baking vegan wonton wrappers in a mini muffin tin for just 10 minutes, you get perfectly golden, crisp little pastry cups without any messy dough prep. Filled with a vibrant, punchy salsa of creamy avocado, sharp red onion, fresh coriander, and a splash of zesty lemon, they are a beautiful, bite-sized explosion of flavour and crunch that will vanish from your platter in seconds.

INGREDIENTS
- Vegan wonton wrappers (available from Asian grocery stores)
Filling
- 1 small-medium avocado (semi firm, cubed)
- 1/3 red onion, finely chopped
- 1 small garlic clove, finely chopped
- 1/4 bunch of coriander finely chopped
- Juice from half of a lemon
- 1 tsp of olive oil (extra virgin is ideal)
- Pinch of salt
- 1/2 tomato or 3 grape tomatoes sliced into quarters
METHOD
- Lightly spray a mini muffin tray with oil. Place wonton wrappers inside the muffin tin as desired and bake for 10-15 minutes until lightly brown at 180 deg C. Cool on a wire rack.
- Mix filling ingredients together, except tomato, in a bowl then spoon into the wonton pastry cups. Place the sliced tomatoes on top for garnish and the tartlets are ready to serve.
