Toast with Soy Chai

Serves 1(Can be GF if using GF bread)
1 tsp Chai Spice Mix (or make your own, see below)
1 heaped tsp of leaf tea
1 tsp sugar (or more if you like it sweeter)
1/4 cup of water
3/4 cup soy milk
1-2 slices of wholemeal bread or fruit loaf
your favourite spread (eg. jam, Nuttelex, peanut butter, golden syrup,
rice malt, Vegemite etc)
Boil spice mix, tea and sugar in a pot, letting it simmer for a couple of minutes. Add soy milk and warm up through to desired heat. Strain into a cup and serve with toast.
To make your own chai spice mix use: 10 Cardamon pods, 1 tbsp ground ginger, 5 Bay leaves, 7 cloves, 5 cinnamon sticks , pinch of black pepper. Crush and mix the spices and store in an air tight container.
Makes approximately 20 serves.
