Porridge with Banana and Wheatgerm by Kasia Serves 1This is an easy and very healthy breakfast recipe, my favourite in the colder months
Ingredients (for one serve): 1/2 cup rolled oats 1/2 cup water 3/4-1 cup your favorite soy milk, or other non-dairy milk 1 small banana 1 tbls stabilized wheat germ Pinch of salt Optional: a few raw almonds, walnuts, brazil nuts (chopped) or raisins
Soak oats is warm water until almost absorbed (this will take only 10-15 minutes if you use hot water). Add ½ cup of soy milk, stir and bring to a boil and simmer for a couple of minutes. Add the remaining soy milk and sliced banana, to achieve the desired consistency. Stir through the wheat germ and chopped nuts/dried fruit just before serving.
Variations: try using fresh berries in place of banana or skipping banana and adding raisins or sultanas instead. Experiment with different nuts and seeds. Enjoy!
