Antipasto Pasta Salad

Serves 2(Can be GF if using GF pasta)
100g dried pasta
1 tomato, diced
½ carrot, grated
4 green beans, chopped
4cm piece of cucumber, diced
1tbsp red onion, finely chopped
6 sun dried tomatoes, chopped
6 kalamata olives, chopped
1 tbsp balsamic vinegar
2 tbsp antipasto salsa (available in supermarkets)
Salt and freshly ground pepper
Cook pasta according to packet instructions, drain and put into a bowl and stir through balsamic vinegar. Leave to cool.
Add all other ingredients and mix well.
Season if required.
