Baked Potato and Mexican Beans

This recipe is what you call quick and easy! Mexican Beans (from Coles) are really tasty, nutritious and inexpensive and all you have to do is open the lid! I find them perfect when trying to loose weight because they are so filling and keep hunger away. Of course, If you have time it’s better to make your own chilli beans. (link here to chilli bean recipe) You can serve with salad if you want.

1 can Coles Mexican Chilli Beans
2 potatoes
1 teaspoon vegan margarine (optional)
salt and pepper to taste

Wash potatoes, prick with a fork then put in microwave for five minutes, then place in a hot oven until soft on inside with crispy skins on outside.

Heat Mexican beans on stove or in microwave.

Slice hot potato in half, dab on margarine then put half a can of the beans on each potato.
