Home made beans on toast

Serves 2

4 slices of bread
1 can of cannellini beans
½ red onion, finely diced
1 garlic clove, crushed
A sprig of fresh rosemary and/or thyme
1 tbsp tomato paste
1 large tomato
1 tsp sugar
Salt and pepper
Chopped fresh parsley
Olive oil


Heat a little olive oil in a pan. Fry the onion and garlic until soft and slightly brown.

Add all other ingredients, except the parsley, and continue cooking for about 10 minutes (stirring occasionally).

Toast bread, spread with vegan margarine if required and top with beans. Sprinkle over a little fresh parsley.
